Main technical characteristics:
• moisture content of cocoa beans is not more than 7.5%;
• 100 g – not more than 105 pieces;
Content of defective cocoa beans:
• underfermented – not more than 10%;
• moldy – no more than 4%;
• dark gray – no more than 8%;
• damaged by insects, germinated or flat (total) – not more than 6%;
• destroyed beans, fragments, pieces of peel (total) – not more than 2%;
• impurities – not more than 1.5%;
• presence of live insect pests and / or their larvae is not allowed.
Toxic elements:
• lead – not more than 1.0 mg / kg
• arsenic – not more than 1.0 mg / kg
• cadmium – not more than 0.5 mg / kg
• mercury – not more than 0.1 mg / kg
• aflotoxin B1 – not more than 0.005 mg / kg
Pesticides:
